1 box Pacific Natural Foods Organic Mushroom Broth
4 cups water
3 Tbsp. Knorr Chicken Bouillon
1 cup mushrooms, chopped (oyster or button), fresh
1/4 cup Nakano Seasoned Rice Vinegar
1/4 cup Kikkoman Less Sodium Soy Sauce
2 tsp Ginger, ground
2 tsp Chili Garlic Sauce (Vietnamese)
1 cup Del Monte 100% Juice Pineapple Chunks In Its Own Juice

.25 cup Cornstarch + 1 cup water

2 large Eggs, whisked
16 oz Vermicelli
2 cups Tofu, firm
4 Green Onions (white part and some of the green)

1 teaspoon. Toasted Sesame Oil
1 teaspoon Pepper, white

ADD THESE INDIVIDUALLY TO EACH BOWL:
3 large shrimp per bowl, cooked separately, cut into 3 pieces
3 mint leaves per bowl, fresh
1/4 lime per bowl



How Do I Make Loaded Hot and Sour Soup?

Here is how you make Loaded Hot and Sour Soup:

1. Add the box of broth, water and liquid chicken bouillon to a large stock pot. Add the mushrooms, rice wine vinegar, soy sauce, ginger, chili garlic sauce and pineapple, and stir to combine. Heat over medium-high heat until the soup reaches a simmer.2. While the soup is heating, whisk together the 1/2 cup of water and cornstarch in a small bowl until completely smooth. Once the soup has reached a simmer, stir in the cornstarch mixture and stir for 1 minute or so until the soup has thickened.3. Continue stirring the soup in a circular motion, then drizzle in the eggs in a thin stream (while still stirring the soup) to create egg ribbons.4. Stir in the vermicelli and let cook for a couple of minutes until soft. Take shears and cut the vermicelli into smaller pieces if necessary.5. Add the tofu, green onions, and sesame oil. Then season the soup with salt and a pinch of white pepper (or black pepper) to taste.TIP: If you?d like a more ?sour? soup, feel free to add in another tablespoon or two of rice wine vinegar as well. Or if you?d like a spicier soup, add in more chili garlic sauce.6. I like to cook the shrimp in a separate pot on the side so that I don't over cook it (it should be pinky/white). I then add the cooked shrimp to each bowl and top with the cooked soup.8.
