2 tbsp. fresh basil, chopped or diced
1 egg, beaten
1 (10 oz.) box frozen spinach
3 (1 qt.) boxes chicken stock or broth
1 lemon, grated* and juiced
1 lb. boneless-skinless chicken breasts, boiled & shredded
6 baby carrots, thinly sliced or diced
1 cup uncooked tiny pasta (I used stars)
2 eggs, beaten

Here is how you make Cristin's Italian Wedding Soup:

Prepare the mini meatballs by mixing the beef, onion, bread crumbs, 1/2 c. cheese, black pepper, basil and egg thoroughly in a small mixing bowl. Use a 1/2 tsp. measuring spoon to scoop the meat mixture into uniformly-sized meatballs.* Set the uncooked meatballs aside.In a large (6- or 8-qt.) stockpot, add the frozen spinach, grated lemon rind, lemon juice, stock, chicken and carrots. Bring to a boil over medium to high heat. Add the meatballs one at a time (to prevent them from clumping). Bring back to a boil and add the pasta. Continue boiling for about 5 minutes.In a small bowl, beat the eggs with a fork or small wire whisk. Beat in the remaining 1/2 c. Parmesan cheese.Using a wooden or cooking spoon, stir the soup while drizzling in the egg mixture.
