1 T. olive oil
1/2 C. onions, chopped
1 tsp. minced garlic
1/2 C. carrots, chopped
1/2 C, celery chopped
6 C. unsalted chicken stock
1/2 tsp. salt
1/4 tsp. pepper
1/2 C. spinach, shredded
2 oz. pastina

Here is how you make Reduced Sodium Italian Wedding Soup:

1) Mix all ingredients for meatballs and shape into tiny meatballs using a teaspoon. Set aside.2) Saute onion and garlic in olive oil in the bottom of a stock pot or large cooking pot. Add celery and carrot and cook briefly.3) Add chicken stock, salt and pepper. Bring to a boil.4) When boiling, gently add meatballs and stir gently to keep them from sticking together. Reduce heat and simmer about 20 minutes.5) Add pastina and spinach and cook until pasta is cooked.
