Here is how you make Curried Lentil Yam soup:

Saute onion in coconut oil until translucent. In the meantime, prep garlic and ginger and get tomato paste and curry powder measured. Once onions are translucent (5-10 minutes at medium heat), add garlic, ginger tomato paste and curry powder and stir. let cook a bit while watching until a paste forms on bottom of pan. Add vegetable stock,coconut milk and 2 cups water. then add lentils and cubed sweet potatoes. Add salt and pepper to taste. cook for 30-40 minutes.add chopped kale and cook 5-10 minutes more. serve this with a big dollop of plain greek yogurt (2% is perfect).
