* Lentils, 1 cup
* 1 tsp tomato paste

* Heat oil in saucepan, and add garlic and onions. Cover and cook until tender, about 5 min.* Meanwhile, put water in pot with vegetable broth cubes. Cover and bring to a boil on high. (If using pre-made vegetable stock, this is not necessary) * Add chopped carrots and celery to saucepan. Dash with cumin, salt, pepper and Soy or Braggs. Let cook until carrots are soft enough to easily puncture.* Transfer to pot with the broth, adding lentils, leeks, and tomato paste. Bring to a boil, then reduce heat to med-low and let simmer 20 min.* Puree in blender or with hand-held until smooth.
