2 cloves garlic, minced (or 2 t. bottled minced garlic)
1 T. ginger, minced (or ginger pur?e)
1 t. jalapeno pepper or other chilli, minced (or 3-4 slices of pickled jalapenos)
1 1/2 C. red lentils
28 oz. tomatoes, canned (or equivalent fresh, diced)
SPICES
2 T. curry powder
1 T. ground cumin (or grind seeds)
2 t. ground coriander (or grind seeds)
1 t. ground cardamom
1/2 t. cayenne pepper or chili flakes
1 t. pepper, freshly ground or to taste

Here is how you make Lentil Soup Sue's:

In large pot (Dutch oven or stockpot), put chicken stock on to boil. Reduce heat and simmer. Meanwhile, in large skillet, heat olive oil over medium heat and saut? onion, carrot, celery, red pepper, garlic, ginger and chopped jalapeno/chili, until onion is translucent and soft. Add to chicken stock. In dry skillet over medium heat, lightly toast all ?C? spices (curry powder, cumin, coriander, cardamom, cayenne/chilli flakes). They?ll be done when you can smell their wonderful aroma. Add to chicken stock. Rinse lentils in colander until the water runs clear. Add to chicken stock. Cover pot and simmer until lentils are tender (almost disintegrated), about 20 to 30 minutes. Stir often. Add tomatoes to heat. Add pepper to taste. For smoother consistency, pur?e soup.Notes:1. Add more spices if you like spicy foods. "Spicy" to one is not to another and this is fairly mild in my opinion.2. I use a dash of cayenne pepper in many things since learning from a professional chef that it brings out other flavours much like salt does.
