How Do I Make Mama K's Lentil Soup?

Here is how you make Mama K's Lentil Soup:

Put 3 cups of dried lentils into water and leave to soak for 45 minutes. Chop vegetables. Once all vegetables are chopped, lightly saute vegetables in olive oil in the following order:Using a cast iron pan or regular pan, heat olive oil over high heat. Add onions & garlic together and stir lightly for approximately 1 minute. Add cumin, tumeric, and salt and saute for another 2 minutes stirring constantly. Add celery to saute pot and continue stirring on high heat or until the onion becomes slightly transparent. Remove onion, garlic and celery from heat and put into soup pan or crock pot you intend to use for lentil soup, being sure to leave juices from the saute in the pan for the carrots.Saute carrots in the juice from the onions, garlic and celery, stirring while on high heat. Saute for 2 minutes or until the carrots become bright orange. Once the carrots become bright orange, remove entire contents of the pan to put in the soup pan or crockpot. Drain water from the lentils and add the lentils to the soup pan or crockpot. Add another dash of salt and 2 bay leaves. Pour the chicken broth over the vegetables and lentils and add up to 1 cup of water. This soup can be has as much broth as you wish; if you need to feed more people, add more water. If you wish for a more "stew like" lentil dish, hold back some liquid.Crockpot instructions: Cook on Low for 3 hours, then turn up to High for an additional 4 hours. (For a shorter cooking time, turn the crockpot onto High for 4-5 hours)Stovetop instructions: Bring to a boil on high heat and simmer briskly for up to 60 minutes, stirring frequently.If you find there is more liquid than you wish, simply drain some of the liquid for a heartier lentil dish.
