1 tbsp olive oil
1 C Lentils
1 med. onion chopped
4 garlic cloves minced
1 tsp salt
1 tsp black pepper
2 C water
2 chicken bullions
1 14 oz can of chopped tomatoes
1 1/2 large carrots chopped (about 1 cup)
1/2 tsp thyme
1/2 tsp sage
1/2 tsp basil
2 C fresh spinach
1 lemon juiced and zested

Here is how you make Mediterranean Lamb and Lentil Soup:

Brown the lamb in olive oil. Add the lentils, onion, garlic, pepper, water, tomatoes, thyme, sage, and basil. Allow to cook (at a soft boil) for approximately 20 mins (your lentils will feel almost cooked). Add the carrots, salt and chicken bullion. When your carrots and lentils are soft add the spinach and cook for another min or two.
