1 1/2 cups red lentils
1 large onion, chopped
4 stalks celery with tops, chopped
4 carrots, peeled and chopped
3 cloves garlic, crushed and minced
3 small russet potatoes, peeled and chopped
3 ozs. red wine
1 quart chicken stock (4 cups)
1 cup diced tomatoes in juice
1 pound turkey polish sausage (kielbasa), sliced about 1/2 inch thick
3 tsp. salt
pepper to taste
1 tsp. cumin powder
1 tsp. dried thyme
2 large bay leaves

Here is how you make Red Lentil Soup:

Heat oil in large stockpot. add onion, celery, carrot, and garlic and cook until onion is tender, about 15 minutes. Pour boiling water over lentils in a dish and let set 15 minutes. drain and add to pot. add potatoes and cook another 5 minutes. add salt, pepper, cumin, thyme to vegetables and cook a few minutes. pour wine in and stir well. add tomatoes and chicken stock and bring to boil. add bay leaves and turkey kielbasa. turn heat down to simmer and cook 1 hour, until lentils are soft and soup thickens. remove the cover and cook another 10 minutes.Serving Size: makes 8 2-cup servingsNumber of Servings: 8Recipe submitted by SparkPeople user MARMAERT.
