2 large onions, chopped
6 cloves garlic, minced
3 tbsp. tomato paste
1 tbsp. ground cumin
3/4 tsp. kosher salt
3/4 tsp. ground black pepper
Pinch of ground chili powder or cayenne, more to taste
3 quarts homemade chicken stock
1 lb. dried red lentils
3 large carrots, peeled and diced
juice of 1 lemon
1 tbsp. dried cilantro


How Do I Make Savory Lentil Soup?

Here is how you make Savory Lentil Soup:

- In large pot, heat olive oil over hight heat until hot and shimmering. Add onion and garlic; saute until golden, about 4 minutes.- Stir in tomato paste, cumin, salt, black pepper and chili powder or cayenne and saute for 2 minutes longer.- Add broth, lentils and carrots. Bring to a simmer then partially cover pot and simmer on medium-low heat until lentils are soft, about 30 minutes. Note: red lentils cook faster than traditional green lentils, so if you're using green you'll have to increase cooking time.- Using an immersion or regular blender or food processor, puree half the soup then add it back to the pot.
