6 + pearl onions - peeled, whole

4-6 small red potatoes - skin on, washed, cubed
Beef stock (4 bullion cubes)
Chicken stock (4 chicken bullion cubes)

Here is how you make TJ's lentil soup:

Prepare all vegetables and set asideIn a large pot start with about 4-6 cups of water, add olive oil if you like and bring to a boil. Add potatoes, carrots, bullion cubes and whole onions allow to boil for about 20 minutes or until vegetables start to get tender. Add lentils and thin sliced onions, V8 and additional seasonings if desired, continue to boil for about 10 minutes then bring down to a med-low tempterature and cover for another 20-30 minutes until everything is tender and broth thickens.
