.5 tbsp butter/margarine/etc
.5 tbsp olive oil
1 med. onion, chopped
1 garlic clove, chopped
1 cup red lentils, rinsed and picked over
1 tomato (or 2 small), chopped (you could also used canned tomatoes, strained tomatoes (this is what I used because I forgot to buy tomatoes), etc.....)
1 tbsp tomato paste
1/4 - 1/2 cup grain mixture (I used a couscous, barley, and quinoa blend that I had lying around, but you can just as easily use brown rice, barley, etc)
5 cups water or stock ( I used veg.)
Spices: .5 tsp to 1 tsp of each: cayenne powder, paprika, cumin (depends on how spicy you like things)
salt and pepper to taste

Garnishes:
fresh or dried mint (seriously, trust me on this on)(traditionally the mint is fried in butter before it is added, but if you are watching calories....)
lemon juice
crushed red pepper flakes

1. Melt that butter and olive in a hot pan2. Add the onions and cook until softened, then add the garlic and cook until fragrant3. Add the tomatoes and cook until they have broken down (about 10 minutes)4. Add the tomato paste and spices, stir and let everything combine for a minute5. Add the water/stock6. Add the lentils and bring to a boil, then simmer and cook for about 30 - 40 minutes7. Add your grain in depending on the appropriate cooking time (the package of my grain mixture said 10 minutes, so I added them when I had about 10 minutes of cooking time left. If you are using rice, you would probably need to add that before the lentils)8. Put it in a blender/use a hand blender to blend 80%-100% 9. Garnish with mint, lemon juice, and red pepper flakes10.
