1 head romaine lettuce - rinsed, dried, and chopped (~4 cup)
1/4 cup chopped fresh tarragon
1/2 cup unsweetened soy milk (or 2% milk)
salt and pepper to taste

Fry leeks and garlic in butter over medium low heat until lightly browned, about 10 minutes. Add broth, bring to a boil then simmer 15 minutes. Increase heat to medium and stir in lettuce.
