Here is how you make Meatball and Stars Soup:

Makes 8 servings of 1 cup soup base and about 7 mini meatballs in each serving.First mix the crushed crackers, egg whites, minced garlic, 2tsp of the dried basil, and about half of the mini pasta stars into the extra lean ground beef. Blend this up really well. You can add some pepper too. Then roll the meat mixture into little meatballs. You should be able to make about 56 meatballs if you make them about 1 inch or use a tablespoon scoop.In a crock pot or large stock pot, pour both boxes of the beef broth. Add two tins of tomato sauce or 2.5 cups of sauce if you don't buy your sauce in cans. Bring this mixture to a boil. Gently add the meatballs (they will cook in the broth). In the last ten minutes or so of cooking you can add the remainder of the catelli star shape pasta or any other tiny pasta. Sprinkle the remainder of the basil to the top of the soup portions.Enjoy.
