In large stock pot-in olive oil put carrots,onions, &garlic-cook for about 3 minutes on medium until onlons are clear-add chicken broth,diced tomatoes,brown rice, Italian seasoning and pepper, cook about 30 minutes(until rice is cooked) Then add navy beans,spinach(chopped), zucchini cook for about 5 minutes more. about .-Can serve with a little parmesean cheese on top-Good with corn muffins.
