3/4 large Vidalia onion, coarsely chopped
4 tablespoons butter
2 tablespoons flour
2 cup brown rice
about 1 tsp black pepper

Here is how you make Boingo's Slovak Mushroom Soup:

Drain a 32-oz jar of sauerkraut into a bowlIn a large soup pot, add about 1/2 cup of the sauerkraut juice, 1 cup of the drained sauerkraut and 24 oz coarsely chopped mushrooms. Add the water.Coarsely chop the onion and saute it in 2 tablespoons of butter until translucent. Add to the soup.Make a roux out of 2 tablespoons flour and 2 tablespoons butter. Add some of the warm broth to thin and whisk until smooth. Add to the soup. Add the brown rice and black pepper.Cook for about 45-60 minutes then taste the broth. If you want to increase the sourness of the soup, add more sauerkraut juice at this point. Cook another 30 minutes then serve. If the soup is simmered too long it can get very thick -- in that case, just add more water until the desired consistency is achieved.The flavor of this soup is determined by the mushrooms and sauerkraut, so use the best quality that you can find. Dried mushrooms make a stonger, smokier flavor. Different brands of sauerkraut vary quite a lot in sour or tartness so start with about half the juice you think you need, then add more according to taste. If you use all the sauerkraut juice and still want the increase the sour flavor in the soup, add cider vinegar, 1 teaspoon at a time.
