2 pieces center cut bacon
6 cups swiss or rainbow chard
1 medium onion, chopped fine
2 tablespoons minced garlic
1 can pinto beans no salt added, rinsed and drained
8 medium mushrooms, chopped
1 can vegetable broth
seasoning to taste (red pepper flakes, white pepper, black pepper)

Here is how you make Mushroom Chard Soup:

In large kettle, fry bacon until crisp, remove bacon to drain, crumble when cooled.In fat remaining in kettle, add onion and garlic, red pepper flakes, white and black peppers (seasonings are to taste). Once softened, add mushrooms, and a little of the broth if needed to prevent sticking.Rinse the chard well, separate bulk of stem from leaves and chop rather small - add this to the onion/mushroom mixture and allow to cook while chopping the remainder of the chard tops in roughly 1/2 inch ribbons.Add the pinto beans and vegetable broth to the mix and bring to a boil. Once boiling, add the chard and mix in, reduce heat, cover and cook for a couple of minutes until wilted.Remove from heat. Add crumbled bacon and run an immersion blender through the soup until desired thickness is reached.
