1 cup Whole Hull-less Barley (Bob's Red Mill)
1 large onion, thinly sliced
4 cloves garlic, minced
2 large carrots, peeled and chopped
2 ribs celery with leaves, chopped
16 ounces cremini mushroom, stemmed and sliced
1 ounce (about 1 cup) dried porcini mushrooms
1/4 cup parsley
8 cups reduced sodium beef broth
2 TB tomato paste
1 TB balsamic vinegar
2 tsp dried thyme
1 TB soy sauce
1 bay leaf
1 tsp sea salt
1 tsp ground black pepper

Soak the porcini mushrooms in enough hot water to cover for a half hour. Strain through sieve. Reserve liquid. Coarsely chop mushrooms.Soak the barley in warm water while chopping the remaining ingredients.In a large soup pot heat the olive oil over medium-high heat.Add onions, celery, carrots and the fresh cremini mushrooms - sautee for about 5 minutes to brown.Add garlic, dried thyme, barley and salt/pepper. Stir and cook another 2 to 3 minutes.Add tomato paste, balsamic vinegar and porcini mushrooms. Stir and cook another 1 to 2 minutes.Add bay leaf, beef broth and reserved mushroom water. Turn heat to high and bring to boil. Cover, reduce heat and simmer about one hour until barley is cooked and soup has thickened.Stir in parsley and (if needed) soy sauce. Serve.Makes 8 very hearty servings. Goes great with a fresh green salad.Number of Servings: 8
