Melt butter in large pan and add onions. Cover and let "sweat" over low heat for 1 to 1-1/2 hours. Sprinkle in flour , stir, and cook 2 minutes. Add red wine to deglaze pan. Add stock, thyme, bay leaf, and salt & pepper to taste. Cover and simmer 10 minutes. Put soup in oven-safe bowls. Place baguette slice on top. Mix the cheeses, then divide over bowls.
