The ingredients for Brendan's Split Pea soup are:

1 cup dry split peas, rinsed and de-stoned
3-4 Tablespoons dry mustard powder
1 cup chicken broth or 1 boullion cube (I use faux-chicken broth)
1 quart water
1 large onion, chopped
3 cloves garlic, minced
4 carrots, peeled and diced
2 stalks celery, diced
3- 4 potatoes, diced
2 Tbl redwine vinegar (or to taste)
Salt and Pepper to taste


How Do I Make Brendan's Split Pea soup?

Here is how you make Brendan's Split Pea soup:

Quickly pick over your dry peas and make sure they are rock free. Pour the water and broth into a dutch oven or large soup pan and add the split peas and mustard powder. Heat over medium until it comes to a boil, then slightly cover it and let it slowly boil for about 20 minutes to soften the peas. Stir every few minutes to make sure they aren't sticking to the bottom of the pan. In the meantime, chop the onion, garlic, carrots, celery and potatoes. After about 20 minutes, add all the veggies in no particular order (I tend to just chop them all into the same bowl and lob them in together) and continue to simmer, uncovered for another half hour or so. Stir often, but you're fine attending to other things and neglecting it for 10 minutes or so at a time. The starch from the potatoes will begin to thicken the soup (also making them into delicious little fluffy pockets) and the split peas will become less like individual entities and one with the soup and broth (Zen!) Once these reactions have occurred, Turn the soup off and add salt, a liberal amount of black pepper, and the red wine vinegar (I use sherry vinegar, but even balsamic or apple cider will suit you just fine.) If you want to nix some of the carbs, feel free to add a few more carrots in place of half the potatoes, but also add a Tablespoon of cornstarch diluted with a bit of warm water when adding the vinegar to keep the soup's thick consistency.
