2.5 C boiling water into which you dissolve 2 tsp. "Better Thank Bullion" Vegetable Base
2 small stalks celery, sliced thin
1.5 C thinly sliced leeks
2 Bay leaves
3/4 tsp dried oregano leaves
1/2 tsp dried rosemary leaves
pinch crushed red pepper flakes
1.5 tsp extra virgin olive oil
1 15 oz can tomatoes, diced or crushed in juice
1 tsp tomato paste (my addition)
1/3 C minced fresh basil
1.5 tsp red wine vinegar
salt and pepper to taste

Here is how you make Chick Pea Soup Italiano:

Prepare the chickpeas/garbanzos as instructed. For quick method, see additional tips.**Once hydrated, drain and rinse the beans. Put Beans, boiling vegetable stock, celery, leeks, bay leaves, oregano leaves, rosemary leaves, pepper flakes and olive oil into a pressure cooker.***Lock the lid in place and bring to high pressure. Lower the heat enough to maintain high pressure and cook for 18 minutes. Turn heat off and allow to cool at room temperature until the pressure subsides.Remove the lid, tilting it away from you to allow any steam to escape. Remove the Bay Leaves. With a slotted spoon, transfer about 1C of the cooked chickpeas to a food processor or blender and puree them with .5C of tomatoes. Stir the remaining tomatoes and the puree back into the pot. Stir in the tomato paste, fresh basil, vinegar, salt and pepper. Simmer for a few minutes until flavors are blended. Serve with crusty bread.
