1 small onion
2 carrots
2 celery stalks
2 cloves garlic
1 tbsp butter
2 tbsp flour
2 1/2 cups chicken broth (or vegetable broth)
1 cup skim milk
2 medium potatoes, peeled and diced small
salt and fresh pepper
4 cups (about 2 heads) broccoli florets, chopped into small pieces
1-1/2 cups shredded sharp cheddar

Here is how you make Broccoli, Cheddar and Potato Soup:

Chop onion, carrots, celery and garlic finely (or use a food processor). Heat butter in a dutch oven over medium heat. Add veggies and saute until tender and water is cooked out. Sprinkle with flour, stir and cook 2 more minutes. Stir in chicken broth and milk. Bring to a boil, reduce to a simmer and add potatoes. Cook until fork tender, about 10 minutes. Add broccoli, cover and cook until broccoli is tender. Blend with an immersion blender until smooth.
