carmelize half of the onions in olive oil.turn up head and add potato chunks. Cook until lightly browned.add remaining onions and garlic. Cook 4-5 minutes. add stock plus 1 cup water, beans, shredded potato (to thicken) ground tarragon, bay leaf, salt and pepper, dry ground mustard, cider vinegar, and ponzu. Bring to a simmer. add cabbage. Cook 10-15 minutes. turn off heat and add a squeeze of lemon. serve plain or with fresh grated parmesan.
