1 1/2 lb. potatoes, scrubbed, skin on, diced
1 bay leaf
1/2 tsp chili pepper flakes
8-10 cups water or vegetable stock
2 cups cooked white beans
4 cups Kale, shredded
1 tbsp. Braggs or Soy sauce
1/2 cup cilantro
1/4 cup parsley
season with salt and pepper

Heat a large soup pot, add the olive oil, followed by the vegetables, carrots, onions, garlic and smoked paprika or chipotle pepper. Saute for 3-5 minutes stirring occasionally so nothing sticks or burns.Add potatoes, bay leaf,hot pepper and stock. Bring to a boil, then turn down and simmer for about 30-45 minutes, until potatoes are done. Add remainder of the ingredients, kale, cilantro, parsley, Braggs or soy sauce and simmer another 15 minutes.
