1 Large potato, peeled and cubed
1 Head celery, washed and finely chopped
1 Leek, washed and finely chopped
2.5 Pints of vegetable stock
2 Teaspoons of sunflower oil
Half cup of nonfat milk

Here is how you make Celery, Leek and Potato Soup:

Saute onion in sunflower oil until soft but not coloured. Add chopped celery and potato, cook for 2 minutes. Add stock, bring to boil then reduce heat and simmer for approx 25 mins (until veg are soft). Remove from heat and cool slightly before blending. Add milk and salt/pepper to taste.
