1/2 stick light margarine
1/2 onion, diced
1 pkg. dry onion soup
1/3 cup (approx.) flour
4 cups cheddar cheese, shredded

Here is how you make Cheesy Cheddar Potato Soup:

Put potatoes in kettle and just barely cover with water. Cook until fork tender. Add ham. In skillet melt margarine and fry diced onion to desired tenderness. Add the flour till all the butter it absorbed and then add the entire can of evaporated milk. (room temperature) Stir constantly till thickened, and then add cheese. Once cheese is melted add the mixture slowly to potato mixture. Add dry onion soup. Season to taste. If soup is not thick as desired add potato flakes till it is the desired thickness.
