1 litre stock made with chicken Bovril
500 grams potatoes
500 grams sweet potatoes
200 ml. light coconut milk
juice and zest of one lime

Here is how you make Chilli and Ginger Sweet Potato Soup:

Saute onion in Fry Light until soft. Add in the garlic (finely chopped), chillies (deseeded and chopped) and ginger (peeled and chopped). Add in the spices, stir, and cook a few minutes.Add the chopped potatoes, sweet potatoes and the stock, bring to a boil, then simmer gently until potatoes cook through.
