Add carrots, onion and garlic and cook, stirring occasionally, until vegetables are starting to brown at the edges (8-10 minutes). Add the spices and cook, stirring, for 1 minute. Add sweet potatoes, bouillon base, water, vegetable stock and bay leaves and bring to boil. Reduce heat and cook at a low simmer until vegetables are very tender. (I let mine cook for 30 minutes). Discard the bay leaves and using an immersion blender or a regular blender (in 2 batches), puree the soup until smooth.
