1 ham bone
4 Qt Water
6 Potatoes, peeled and diced
1 Medium Onion, diced
5 Stalks Celery with tops, chopped
1/2 C Fresh Parsley, minced
3 C Chopped Cabbage or Cole Slaw Mix with Carrots
6 T All Purpose Flour
2 C Half & Half Cream
1/2 C Cold Water
Ground Nutmeg


How Do I Make Danish Potato Soup?

Here is how you make Danish Potato Soup:

In a soup kettle, bring ham bone and 4 quarts of water to a boil. Reduce heat and simmer for 1 hour or until meat pulls away from the bone. Remove the ham bone. When cool enough to handle, trim any meat and dice. Discard bone. Return ham to kettle along with potatoes, onions, celery, parsley, cabbage/cole slaw mix. Cook for 40 minutes. Stir together flour and 1/2 Cup cold water. Slowly pour into the soup, stirring constantly. Bring soup to a boil; cook 2 minutes. Reduce heat; stir in cream. Remove from heat.
