Velveeta Cheese Product, 8 oz |(1/4 of a block, cut up into cubes)
*Crystal Farms Finely Shredded Sharp Cheddar Cheese, 2.5 cup- or any brand
*Great Value Half & Half, 32 tbsp |(one whole pint)- room temp
*Green Giant Fresh Baby Cut Carrots, 6 oz- cut up into 1/2 size pieces. (about 3/4 C)
*Flour, white, .25 cup
*great value unsalted butter, 3 tbsp room temp
Dried Thyme or use fresh if you have it, 1 tbsp
Add Salt and freshly ground black pepper to taste.

Here is how you make Extra thick and cheesy Potato Soup:

Peel, wash and cut potatoes and add to a large pot and cover with water. Cook on Med- High heat for 20 min. Half way through- add in the carrots.In another large pot cut up the butter and melt and whisk in the flour over med-high heat to make a rue.Keep constantly stirring/whisking until it thickens 3-4min. add in diced green onions.Slowly add in half and half and stir over med heat and then add in cubed velveeta. Stir until melted.Drain about half of the water from the potatoes and carrots once they have cooked for 20 min. I leave atleast 2 cups of the water still in the pot with potatoes, then pour the cheese sauce mixture over the potatoes and carrots and leftover "potato water". Add in the shredded cheese, salt, pepper, thyme. Stir and cook over low heat for atleast another 20-30 min. Stir often and make sure heat is not too high so it doesn't stick on bottom.Makes 3 quarts or 12 1 Cup servings. Number of Servings: 12Recipe submitted by SparkPeople user ZEPPYB.
