What Are The Ingredients For Karen's Chunky Potato Soup Recipe?The ingredients for Karen's Chunky Potato Soup are: 2 cups chicken broth (or use boullion to make 2c)2 cans Lowfat 2% Evaporated Milk 1 cup skim milk 1 medium onion, chopped 2 stalks celery, chopped 8 slices of Turkey Bacon .25 cup flour 3 T butter 5-6 potatoes 6 oz shredded cheddar, lowfat red pepper flakes, optional black pepper, optional How Do I Make Karen's Chunky Potato Soup?Here is how you make Karen's Chunky Potato Soup: Bake the potatoes (I used the microwave.) Set aside. Fry the bacon in a pan until almost done. (Turkey bacon doesn't get very crunchy.) Add the onion and celery and cook until tender, but do not brown. Set aside when done. In a large pot over medium heat, melt the butter. Add the flour and stir until smooth. Gradually add in the 2 cups of chicken broth, both cans of evaporated milk and the skim milk. Dice the baked potatoes and add to the pot. Cut the bacon into small pieces and add the bacon, onion and celery to the pot. Add in red pepper flakes and pepper to taste. Simmer this over low heat for about 15 minutes or so. 2 minutes prior to serving, add in 6 oz of shredded cheese and stir in until melted. Serve with sprinkling of cheese on top. This should make at least 6 servings if not more.
