In a wide saucepan over medium heat, melt 3 tablespoons of the Earth Balance buttery stick. Add the leeks and onion and cook until tender for 15 minutes. Add the water, soup base, and potatoes. Bring to a boil. Reduce the heat to low, cover, and simmer until potatoes are tender - about 15 minutes.2. Use either a blender or hand blender to puree the entire batch, or save a cup of the mixture to mix into the pureed soup. Return to heat and stir in last tablespoon of Earth Balance until melted.
