1 Tbsp Extra Virgin Olive Oil
1 large onion, chopped
9.5 Cups Low Sodium FF Chciken Broth
1 can FF canned milk
5 servings cooked/drained bacon, crumbled
1/2 Cup 2% Sharp Cheddar Cheese
2 Tbsp parlsey
1/2 C chopped celery hearts (leafy green part)
Mrs. Dash Tomato basil


How Do I Make mock potato soup - low carb!?

Here is how you make mock potato soup - low carb!:

In a large steamer place Cauliflower and cook until soft. Place cauliflower on baking sheet, spray with pan spray and sprinkle Mrs. Dash on top. Put in oven on broil until the caulflower is golden. In a large pot, place chopped onions and Tbs of olive oil and one can of broth. Cook the onions until they are tender. Add celery hearts.Add the cauliflower back in the pan with rest of the broth. Simmer for 10 minutes. Remove half the mixture and puree in blender or with mixer. Recombine and add bacon, parsley, canned milk and cream. Heat and serve with cheese.
