8 Tbsp butter

3 cups milk (1%)

How Do I Make Peggy's Potato Soup?

Here is how you make Peggy's Potato Soup:

In a large dutch oven, combine diced potatoes and chopped onion. Cover with enough water by approximately 1". Boil until potatoes are easily pierced with a fork. While potatoes are cooking, melt butter in a saucepan. Stir in flour to make a roux. Gradually add milk and stir constantly until mixture is a thickened white sauce.When potatoes have finished cooking, remove at least 1/2 of the water (water only). Add white sauce to potatoes and stir thoroughly. Reduce heat to low.In a small bowl beat the two eggs. Gradually stir in the 1/2 cup of flour until you have made a soft dough. (You may need more or less flour to obtain the consistency you want.) Drop dough by teaspoonfuls into the soup. Stir and let cook another 3 to 5 minutes.
