After 10 minutes (the time it took me to wash, peel and chop potatoes) add potatoes and vegetable stock. Bring to a low boil over medium high heat and leave covered until potatoes begin to soften. Add milk, asparagus, parsley and chives and simmer over medium low heat, covered until soup begins to thicken. When asparagus softens and begins to fall apart, take soup off of heat. I used an immersion blender to puree the soup, but a normal blender would work as well, however you'd have to do it in batches!Once soup has been pureed, add water (feel free to add more to stretch servings... i just enjoy my soup thick!) and serve!
