I came up with this receipe so hubby and I could enjoy a bowl of good homemade soup without my need to make a huge pot that both of us eat too much of. Make any substitutions for your family. Here is how you make Potato Basil Soup:

In a large saucepan add potatoes, carrots, onions, and garlic. Put enough water in pan to just cover ingredients. Cook till vegetables are just tender. Remove from heat and cool slightly; and then add milk, basil, and salt, pepper to taste. Place back on stove and heat through, being careful not to boil. As it warms, sprinkle in potato flakes. This is used to thicken the soup slightly. Ladle in bowls. (Optional, sprinkle Parmesan cheese over top, adds additional 23 cal. per serving).
