Use only white and light green part of leeks. Discard green tops. Cut leeks in half lengthwise and rinse thoroughly, peeling back outer layers to rinse. Chop leeks. Peel potatoes if desired, or scrub well and cut out any eyes or blemishes. Slice potatoes in 1/8 inch thick pieces. Melt butter and marg. in large pot, add leeks and saut? gently, do not brown. Add potatoes and stock, cover and simmer gently about 20 min. Add milk and herbs, ( salt and pepper if desired), simmer another 10 min or so till potatoes are very soft. Combine water and cornstarch and stir into soup. Simmer 5 min . Stir in cream and heat through, do not boil. Pur?e with stick blender or leave chunky. ServeServing Size: 1.75 cup servings.
