Combine the first 7 ingredients and lay on a cookie sheet and roast in the oven at 450 degrees F for 30 minutes. Remove from oven and place in a sauce pan. Add chicken stock and boil for a few minutes until the chicken stock has heated though. Take off the heat and use an emersion blender to blend soup into a creamy consistency.
