2 pounds red potatoes, peeled and cubed
2 cups roughly chopped green onions
1/4 cup olive oil
2 cups arugula
7 cups chicken broth

1/4 cup heavy cream
8 ounces plain greek yogurt
1/2 cup white wine
salt and pepper to taste

Here is how you make Roasted Potato Soup:

Toss potatoes in olive oil and salt and pepper. Bake in 400 oven for 30 minutes. Toss in the green onions and bake another 20 minutes. Add arugula, toss with oil and bake 10 minutes or until wilted.Put potatoes through a food processor in batches, with broth as necessary. Use the wine to "clean" the baking sheet of all browned bits and pieces, and add to pureed soup. Add remaining broth, chicken, cream and yogurt and heat through.
