1 medium onion
3 tomatoes
3 garlic gloves
1 tbsp olive oil
1/4 teaspoon of sea or kosher salt
1/4 teaspoon black pepper
4 cups chicken broth
1/4 teaspoon cumin
1/4 teaspoon coriander
1/4 teaspoon smoked paprika


How Do I Make Roasted Tomato and Potato Soup?

Here is how you make Roasted Tomato and Potato Soup:

Pre-heat oven to 400 degrees. Chop the first three ingredients into 1" squares. Leave garlic whole. Place the garlic and chopped ingredients on baking sheet. Drizzle olive over vegetables. Sprinkle salt and pepper over vegetables and toss. Place in oven and roast for 40 min or until potatoes are fork soft. Allow vegetables to cool for 10 min. Once cooled, put vegetables in food processor or blender. Blend until a past as formed. Take a large saucepan and put vegetables in it. Pour chicken broth in and turn to medium heat. Stir until combined. Put cover over and bring mixture to a boil. Once mixture has boiled add remaining ingredients. Serve hot.
