Carrots, 2 c, diced
Onion, 1 med, diced
Flour, 1/4 c
skim mild, 4 cups plus 1/2 c
chicken broth, 1 cup
Potato, 8 med, diced
Half and half, fat free, 1 c
salt
pepper
med shrimp, deveined and shelled, 12 ounces

Optional:
shredded cheddar cheese
bacon bits or crumpled bacon

Here is how you make Shrimp and potato soup:

Serving size 8-12 (calories based on 10) 322 calories per servingMelt butter in pan. Add carrots and onions and saute until onions are slightly tender (about 5 minutes). Pour 4 cups of milk in a pan and slowly warm. Do not let boil. Meanwhile, bring pot of water to boil and add shrimp. Boil for 3 minutes and then remove from water and set aside. Be careful not to overcook shrimp. Add flour to carrots and onion. Stir and cook for about a minute. Add heated milk. Add chicken broth and another 1/2 cup of milk. Add potatoes. Stir. Add potatoes. Cook until potatoes are tender, about 15 to 30 minutes. Be careful not to let it scorch. So cook on low and stir frequently. Cook as long as it takes to get potatoes tender. Add half and half, salt and pepper to taste, and shrimp. Serve as is or add some shredded cheddar cheese and bacon to top (not included in calorie count).
