This recipe is my adaptation of one given to my mother by a family friend. It had been in her family for quite some time.I made changes to make it a bit lower in fat (the original called for half-and-half, and used either pre-prepared hashbrown patties or seasoned potatoes).I was also trying to lower the sodium, and remove some of the flavoring agents and preservatives which come in pre-prepared foods because those were triggering migraines in some of my family members.My husband calls this "Potato Goup" because it's think enough you can eat it with a fork.If you want to garnish it, a tablespoon of sour cream and a sprinkle of bacon pieces goes well with the flavor of the soup.

2 Tablespoons of unsalted butter

2 bags of Simply Potatoes Shredded Hash Browns
6 cups of 2% milk (you can substitute skim to reduce fat)
1 stick of unsalted butter
6 cups of shredded mild cheddar cheese
6 Tablespoons dried parsley flakes
2 Tablespoons ground oregano
2 Tablespoons of ground black (or mixed) pepper
2 teaspoons of Mrs. Dash Garlic and Herb seasoning Blend (to tasted)
2 10.75 oz cans of Cream of Chicken Soup

Here is how you make Southern-Style Potato Soup:

Set up your crock pot, and set the temperature on High. Put the stick of butter in the crockpot to melt. Wash the green onions, and remove any roots. Chop onions into 1/2 inch lengths. Use entire onion.Heat 2 T of butter in a skillet, and saute onions until soft.While the onions are sauteing, layer the remaining ingredients in the crockpot.potatoescream of chicken soupmilkspicescheeseOnce the onions are done sauteing, put them on top of the layers in the crockpot.Lower the temperature to medium or low (depending upon what temperatures you have on your crockpot), and let it cook for around 30 minutes.Stir the ingredients together.Let it cook for another 60 minutes or so, stirring occasionally.
