Saute on med. ginger, garlic and shallots in some coconut oil from the top of the coconut milk a few minutes. Add curry, cook 1 min. add a little broth if needed. Add the rest of broth and bring to a boil. Add veggies and shrimp.Turn down heat to med. add coconut milk and simmer till warm. Add rest to taste.
