Cook onion, garlic and Smart Balance in a large pot until onion is almost translucent. Add everything else to the pot, except for the corn starch and milk. Cover and allow to simmer for at least 30 minutes, preferably closer to an hour. Uncover, add milk with corn starch mixed in, and stir to mix with the rest of the soup.
