2- 15 oz cans Pumpkin Puree
32 oz chicken broth
12 oz pear nectar
1/2 c creamy peanut butter
Heaping Tablespoon Minced Garlic
4 T fresh grated ginger
2 T fresh lime juice or the juice from 1 lime juice
2 T finely chopped green onions
1/2 t salt
1/4 t cayenne pepper


How Do I Make Ginger Pumpkin Soup?

Here is how you make Ginger Pumpkin Soup:

In a saucepan, combine pumpkin, broth & nectar. Add liquid to pumpkin while stirring. Bring to boil. Cover, reduce heat to low & simmer for 10 minutes.In a blender process 1 c of pumpkin mix with peanut butter until smooth. Return to saucepan with remaining mixture. Add garlic, ginger, green onions, lime juice, salt & cayenne. Cook 10 minutes over med low heat.
