Here is how you make Red Curry Coconut Pumpkin Soup:

Heat olive oil in a large pot (I used 5.5 quart). Add onions and jalape?os and cook through until onions are soft and transparent, perhaps even browning a bit. Add curry paste and stir fry for a couple of minutes. Stir in coconut milk, pumpkin, boullion (use vegetable boullion to make this soup vegetarian), and three cups of water. Bring to a boil then turn down heat to simmer for 20 minutes. Add more or less water to achieve desired consistency.
