Here is how you make Susan's Pumpkin Soup:

Cut Pumpkin into large pieces, coat with Olive Oil bake at 350 for 30 min.Course Chop remaingin ingredients. In very large soup pot heat Olive Oil, add apple, onion, shallot, garlic, pumpkin, celery. Mix thoroughly, bring to a boil. Add Chicken broth and all the spices, salt and pepper. Bring to a boil, reduce heat to med-low. Cover pan and simmer for 30 minutes or until apples and celery are soft.Let cool slightly, in small batches puree soup. Mix in milk and half & half. Season to taste.
