1 Tbsp. olive oil
1 qt. water
1/2 tsp. salt
1 med. onion, chopped
2 celery stalks, diced
1 med. carrot, diced
1/2 c. butter
1/2 c. flour
3 c. chicken broth
2 c. half & half
1 c. fully cooked ham, diced
1/2 tsp. rosemary
1/4 tsp. pepper


How Do I Make Creamy Wild Rice Soup?

Here is how you make Creamy Wild Rice Soup:

In a soup kettle, over medium heat, saute rice in oil for 5 minutes. Add water & salt. Bring to a boil. Reduce heat. Cover & simmer for 35 minutes (rice will not be fully cooked.) Drain; reserve 1-1/2 c. of liquid. Set rice & liquid aside separately. In the same kettle, saute onion, celery, & carrot in butter until onion is transparent. Reduce heat & stir in flour. Cook until bubbly. Gradually add broth & reserved liquid, stirring constantly. Bring to a boil. Boil for 2 minutes, stirring constantly. Add half & half, ham, rosemary, pepper, & rice.
