3 sticks butter
1 1/2 cup flour

3 boxes (each 32 oz) Kitchen Basics Original Chicken Stock
4 cups half & half cream


How Do I Make Kristin's Wild Rice Soup?

Here is how you make Kristin's Wild Rice Soup:

Cook chicken thighs in oven, boiling water or slow cooker (season as desired). Debone chicken and set aside. Bring 8 cups water and 2 lbs wild rice to a boil. Simmer for 45 minutes. While that is simmering, finely chop 1 large onion and 2 lbs carrots. Saute onion and carrot in 8 T. butter (1 stick) until tender. Set aside. Now take a stock pot and melt 2 more sticks of butter. Blend in 1 1/2 cup all purpose flour and simmer until smooth and bubbling. Pour in 3 boxes of Kitchen Basics Original Chicken Stock (12 servings) and blend. Heat through and simmer.
