Cut tomato, pepper, and onion into small pieces.2. Throw them in a blender and liquify. (I leave the tomato at the bottom because the juices help liquify the mixture better). You can use more or less of any ingredient. The mixture should look kinda greenish.3. Place 1 tbsp of oil (I use coconut for flavor but any oil will work just fine - canola and olvie only add about 6 more calories) and heat it up - add tomato mixtureAfter it has fried enough and you can smell it, add about 2 or 3 cups of water.4. Throw in the brown rice and leave it until it cooks (about 50 minutes) on medium heat after a boil.5. Throw in the whole eggs6. Throw in the shrimp as soon as the eggs look done and boil for a bit longer8. Add salt to you liking7. Remove from heat and pour coconut and evaporated milk (you can do all evaporated or all coconut to your liking)8. Stir and let sit for about 5 minutes9.
